Raw Mint Choc Squares

For the raw chocolate layer;

  • 1/3 cup coconut oil 
  • 4 tbs Creative Nature Cacao Powder
  • 1/2 mint extract or to taste 
  • 1/2 tsp vanilla essence 
  • 1 tbs maple syrup 

  • For the mint ganache;
  • 1/3 cup coconut oil 
  • 1/2 tsp mint extract 
  • 1 and 1/2 tbs maple syrup 
  • 1/2 tbs Creative Nature Spirulina Powder
  • 1/4 tsp turmeric 
  • A dash of vanilla essence 
  • Creative Nature Raw cacao nibs to add some texture

First, melt the coconut oil over a low heat and add the rest of the ingredients for the chocolate layer, and mix until well combined. Transfer to a container/tray (I used a see through sandwich box), and refrigerate for 10 minutes until set. 

Meanwhile, mix all of the ingredients for the ganache together. You could melt the coconut oil slightly in order to make it easier to mix if you like. Once everything is well incorporated, smooth over the now hardened chocolate layer and sprinkle over some raw cacao nibs.  

Allow to set in the fridge or even the freezer if you can’t wait too long! Then slice into as many squares as you fancy. Make sure you store these in the fridge, or the freezer if you want to keep them for a bit longer.
